Blueberry Buckle

This Blueberry Buckle recipe includes a delicious blueberry cake baked with a crumbly, buttery cinnamon topping.

This recipe is super easy to make. Grab some fresh blueberries to make this amazing blueberry buckle! You can use frozen blueberries if fresh are not available to you, but fresh will always be best. Buckle can be eaten as a coffee cake for breakfast or an afternoon snack. Or you can serve it up as a dessert as well.

Ingredients needed:

  • all purpose flour
  • baking powder and salt
  • shortening
  • granulated white sugar
  • egg
  • milk
  • blueberries
  • ground cinnamon
  • butter

How to make Blueberry Buckle:

Preheat the oven to 350℉. Spray an 8×8 or 9×9-inch pan with nonstick spray.

PREPARE THE BUCKLE:

In a medium bowl, whisk together the flour, baking powder and salt.
 
In a medium bowl, use a hand mixer to combine the shortening and sugar- beat on high speed until light and fluffy. Beat in the egg. Add the dry ingredients and milk alternately to the egg mixture; beat until smooth after each addition. Spread the batter into the prepared pan. Sprinkle the blueberries on top.

MAKE THE TOPPING:

In a separate bowl, combine the flour, sugar and cinnamon. Using a pastry blender, cut in the butter until the mixture resembles coarse crumbs. Sprinkle the topping over the blueberries.

Bake for 50 to 60 minutes, or until golden brown. Let your blueberry buckle cool for at least a few minutes before you cut it into slices.

That’s the good stuff, right there. It’s a tender, sweet cake on the bottom with the most delicious layer of cooked blueberries and sweet crumb topping

Serve it warm (with a scoop of vanilla ice cream, if desired). Leftovers are excellent too. Enjoy!
