Also known as million dollar chicken casserole, this is one of our go-to recipes to make for dinner. It’s a family favorite, and it super quick and easy to make. Everyone loves chicken casserole with Ritz crackers! It reminds me of another comfort food favorite that our family loves: Grammy’s Tuna Casserole. But this one is made with chicken in a decadent creamy sauce.
Ingredients and Substitutions:
- Chicken: It’s easiest to use shredded rotisserie chicken. But you can also used chopped, cooked or grilled chicken breasts or canned chicken.
- Cream of Chicken Soup: Cream of mushroom soup or cream of celery soup may also be used.
- Cheese: We use shredded cheddar cheese. But you can get creative with your cheese choice here!
- Sour Cream: Greek yogurt may be substituted for the sour cream.
- Onion: We use chopped green onions. You can used chopped sweet onion or shallots (just know that will bring forth a stronger onion flavor). Chopped fresh parsley can be used to garnish the top, if desired.
- Chicken Broth: This is used to thin out the creamy sauce a bit. Feel free to use a bit more if you feel like it’s too thick.
- Dijon Mustard: Dijon is going to bring some tangy flavor to the cheese sauce. It won’t make it taste spicy.
- Seasonings: Garlic powder, onion powder and salt/pepper
- Ritz Crackers: Saltine or club crackers may be used in place of the Ritz crackers.
- Butter: We use unsalted butter since there is quite a bit of sodium in the recipe already.

How to make Chicken Casserole with Ritz Crackers:
- Preheat the oven to 350℉. Spray a 9×9-inch glass pyrex dish or baking pan with nonstick spray.
- In a large bowl, combine the chicken, soup, cheddar cheese, sour cream, green onion, chicken broth, Dijon, garlic powder, onion powder, pepper and salt.

Then scrape the mixture into the prepared baking dish and smooth the top. Crush the Ritz crackers and drizzle the melted butter on top. Sprinkle the buttered crackers on top of the chicken mixture. Bake for 30 minutes, or until the top is browned and bubbly.

Recipe Tips:
- Feel free to add different seasonings, as desired. Anything you’d normally use for cooking chicken would be just fine. Some people have mentioned that they like to add a teaspoon of poppy seeds!
- Since this chicken casserole is pretty versatile, try adding in some other goodies. I suggest chopped celery, broccoli, jalapeno, cream cheese, frozen peas or Tabasco sauce.
- Try using crunchy fried onions on top instead of Ritz crackers.
- The easiest way to make the crushed Ritz crackers is to add them to a large zip baggie and just crush them with your hands. No need for a food processor or any special tools. They’ll break apart easily. Alternately, you can just crush them in the sleeve that they come in.
- Leftovers may be stored in a sealed container in the refrigerator for up to three days.
