Chocolate Cheesecake Strawberry Bites
Sometimes you need a dessert that is not an over-the-top layer cake or a cheesecake cake. Cakes are more time-consuming to make, so a mini hand-held dessert is easier to make and easier to serve too! Plus, they’re cute! They’re easy to grab for guests, so little dessert bites are great for a party.
This recipe comes from our friend Maegan Brown’s new cookbook: Brilliant Bites- 75 Amazing Small Bites for Any Occasion. This is an awesome book that is perfect for easy entertaining. 🛒 Ingredients needed:
- cream cheese
- powdered sugar
- vanilla extract
- dark chocolate chips
- large fresh strawberries
- mini chocolate chips
✏️ How to make Chocolate Cheesecake Strawberry Bites:

- In a large bowl, use a hand mixer to combine the cream cheese and powdered sugar until well-combined. Beat in the vanilla extract.
- In a small microwave-safe bowl, heat the chocolate chips in 30-second intervals, stirring after each interval, until melted. Let cool slightly. Add the melted chocolate to the cream cheese mixture and beat on low speed until just combined, then on high speed until smooth. Cover and refrigerate for at least 30 minutes.
- Meanwhile, wash and dry the strawberries. Slice each strawberry in half lengthwise through the stem, leaving the stem intact. Using a small spoon or strawberry huller, hollow out the middle of each strawberry half, being careful not to go too deep.
Place the chilled cheesecake mixture in a piping bag with a decorating tip or a resealable plastic bag with a corner snipped off, then pipe into each strawberry half.

- You can use low fat cream cheese to lighten up the dessert bites, if you’d like.
- The recipe calls for using dark chocolate chips, but you can certainly substitute milk chocolate.
- Leave the mini chocolate chips off (as garnish), or use a different garnish such as festive sprinkles or chopped nuts.
