  • extra virgin olive oil
  • honey
  • fresh apricots
  • wheel of brie cheese
  • balsamic glaze
  • baguette slices, for serving

✏️ How to make Grilled Brie with Apricots and Balsamic Glaze:

  1. Preheat the grill to 450℉ .
  2. In a small pan over medium-heat, heat 2 tablespoons of the oil with 1 tablespoon of the honey until the honey melts. Brush this mixture all over the apricot halves and put them on the grill, cut-side down. Cook for about 5 minutes until the apricots are nicely charred.
  3. Coat the outside rind of the Brie wheel generously with the remaining tablespoon of oil, place it on the hot grill, on the side away from the direct flame, close the grill lid, and cook for 2 minutes. Turn the cheese over, close the lid, and cook for 2 minutes. When the Brie is soft to the touch in the center, it is done.
  4. Remove the Brie, quarter it, and place 1 quarter on each plate. Place 2 apricot halves next to the Brie, drizzle with the remaining 4 tablespoons of honey, and drizzle the balsamic glaze over the top in an attractive pattern. Serve with baguette slices.

➡️ Tips and Substitutions:

  • Substitute peaches or nectarines for the apricots.
  • Skip grilling fruit. Just grill the brie, and serve it with heirloom tomatoes and the drizzle.
  • Serve with sturdy crackers or some lovely flatbread instead of baguette.

How to make balsamic glaze:

  1. Bring some balsamic vinegar to a boil in a small saucepan over medium heat.
  2. Reduce the heat to simmer and cook, stirring often, until the vinegar is reduced by half, about 10 to 15 minutes. You will likely need to reduce the heat while simmering.
  3. Allow the glaze to cool. Then it’s ready for drizzling. Keep refrigerated.
