Grilled Chicken Taco Kebabs are made up of taco-seasoned chicken with peppers, onions and tomatoes served with sour cream and guacamole.
Grilled Chicken Taco Kebabs
Here’s a way to eat tacos on the grill instead of heating up your house! You don’t need any tortillas, unless you want them. And you can include all of the taco fixings that you’d like (I suggest guacamole and sour cream).
🛒 Ingredients Needed:
- taco seasoning
- tomato juice
- canola or vegetable oil
- skinless, boneless chicken
- green bell pepper
- red bell pepper
- sweet onion
- cherry tomatoes
- taco fixings (salsa, sour cream and/or guacamole- as desired)
✏️ How to Make Grilled Chicken Taco Kebabs:
*The complete, printable recipe with all ingredients and instructions is at the end of this post.
- In a large zip baggie, combine the taco seasoning, tomato juice and oil. Swish around to mix well. Pour our ½ cup into a dish to set aside for basting later. Add the chicken to the bag, and move it around to coat with the marinade. Zip the baggie closed, and refrigerate to let marinate for at least 3 hours.
- Drain and discard the marinade from the chicken. On six metal skewers, alternately thread the chicken, peppers, onion and tomatoes. Grill, uncovered, over medium-heat for 3 minutes on each side. Baste with the reserved marinade. Continue turning and basting until the chicken is cooked through, 6 to 8 minutes.
➡️ Tips and Substitutions:
- Use chunks of steak or pork in place of chicken, if you’d like.
- Change up what veggies you’d like to grill. I suggest trying mushrooms and/or zucchini.
- Add tortillas to this dinner, and slide your kebab into a tortilla to make an “actual” taco.
How to make Homemade Taco Seasoning:
Combine the following, and mix with the chicken to season.
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
