These Red Velvet Cool Whip Cookies are a super easy to make 4-ingredient cookie recipe using a cake mix as the base.
If you are a fan of cake mixes, this is a really simple way to make a batch of cookies. You won’t need flour and sugar and baking powder or anything like that. And this is a good recipe for kids to get into the action and help make cookies too.
🛒 Ingredients Needed:
- box of red velvet cake mix
- Cool Whip
- egg
- powdered sugar

Preheat the oven to 350℉. Line baking sheets with parchment paper.

In a medium mixing bowl, use an electric hand mixer to combine the cake mix, Cool Whip and egg just until combined. Put the powdered sugar into a small bowl.

Use a cookie scoop to scoop out the dough and place it into the bowl with the powdered sugar. Then roll the dough in the powdered sugar without touching it with your fingers. You don’t want your fingers to become red from the cookie dough. Place the cookies on the prepared baking sheet about 2-inches apart.
Bake the cookies 14 to 16 minutes, until the edges are firm.

- You can use any flavor of cake mix for this recipe. Make sure you look for a 15.25-ounce box of cake mix. Some of the companies have been reducing the ounces!
- Baking these cookies on parchment paper helps the bottoms of these red velvet cool whip cookies bake evenly.
- This recipe can be made with fat-free or sugar-free Cool Whip too. Do not use homemade whipped cream. They will not turn out the same.
- The dough will be soft and fluffy.
