Fix it and Forget It: Slow Cooker Dump Dinners and Desserts:
This recipe comes from a cookbook written by Hope Comerford: Fix It and Forget It: Slow Cooker Dump Dinners and Desserts- 150 Crazy Yummy Meals for Your Crazy Busy Life. Does this sound like a cookbook you need in your life? If you have a crazy busy family who is running all over the place with activities here and there, then you definitely do! If you enjoy using your slow cooker, then you definitely need to check out the whole series of Fix it and Forget It cookbooks. They’re a great resource for easy dinners.
Here are a few easy recipes I’ve bookmarked to make from this cookbook: White Chicken Chili, Kielbasa Soup, Salsa Ranch Chicken, Apricot Chicken, Texas Pot Roast, Beef Pitas, Slow Cooker Baked Ziti, Chocolate Pudding Cake, Chocolate Peanut Butter Dump Cake and Gingerbread Apple Cobbler. All of the recipes have a short list of ingredients and are very simple to make.
Ingredients needed:
- pork shoulder
- diced tomatoes
- taco seasoning
- honey
- flour tortillas
- desired toppings
How to make Slow Cooker Pork Burritos:
In your slow cooker insert, add a pork shoulder roast, a can of diced tomatoes with green chiles, a packet of taco seasoning and a couple of teaspoons of honey. Cook on low for 8 to 10 hours, until the pork shreds apart easily. Take the pork out of the slow cooker and shred it apart. Then add the shredded pork back to the juices in the slow cooker.
It will be nice and tender! You can transfer the pork and some of the juices to a serving bowl.
Set out everything for each person to make their own burrito. Everyone likes different things in their slow cooker pulled pork burritos, so setting out a do-it-yourself burrito bar is an excellent idea.
What are the best fillings to add to a burrito:
- refried beans
- Mexican rice
- chopped lettuce
- shredded cheese
- sour cream
- salsa
- guacamole
Wrap up the burritos to serve. Read this post on how to wrap a burrito, if you’re not sure how to do it! We like to cut ours in half to serve. Alternately, you can wrap the whole burrito in foil and just peel it back a little at a time to eat.
These burritos are such a favorite for dinner. Kids love them, and adults love them equally! Burrito bowls are another option for using up this tasty shredded pork. Add the shredded pork to a bowl with your favorite fixings, and eat. No flour tortillas necessary. Whether you eat these as burritos or bowls, they are delicious.
