Instructions

  • Preheat the grill to 450℉ .
  • In a small pan over medium-heat, heat 2 tablespoons of the oil with 1 tablespoon of the honey until the honey melts. Brush this mixture all over the apricot halves and put them on the grill, cut-side down. Cook for about 5 minutes until the apricots are nicely charred.
  • Coat the outside rind of the Brie wheel generously with the remaining tablespoon of oil, place it on the hot grill, on the side away from the direct flame, close the grill lid, and cook for 2 minutes. Turn the cheese over, close the lid, and cook for 2 minutes. When the Brie is soft to the touch in the center, it is done.
  • Remove the Brie, quarter it, and place 1 quarter on each plate. Place 2 apricot halves next to the Brie, drizzle with the remaining 4 tablespoons of honey, and drizzle the balsamic glaze over the top in an attractive pattern. Serve with baguette slices.
