Pat the pork chops dry with paper towels. In a small bowl, stir together the Italian seasoning and salt. Rub the mixture all over both sides of the chops.
In a large skillet, melt the butter over medium-high heat. Add the chops and reduce the heat to medium. Cook, flipping once, until done (145°F), 8 to 10 minutes. Let the chops rest for 5 minutes before serving. Add another small pat of butter on top, for serving (if desired).
Store any leftovers tightly covered in the refrigerator for up to 4 days.
